My new favorite cookies.
My Sunday Pinterest Baking
You can find the recipe on Pip & Ebby or on my Pinterest board cookies/ Lisa Bishop -look for swirled sugar cookies. My friend's grandson Jerry is allergic to eggs and these cookies have no eggs. I thought I'd bring some cookies to Jerry.
Except of course I can never follow a recipe. So forget the food processor, and the cold butter. I took room temp butter and threw it all in my Kitchen Aid mixer. Cut the granulated sugar to about a quarter cup (I doubled the recipe.). I also added another layer, so they were red white and blue. I had red white & blue stars sprinkles and multi-colored non-pareils. I also dumped about 2 teaspoons of almond flavoring to the whole bowl of dough.
I buy most of my supplies at a bulk store especially sprinkles they are so expensive when you go to the store and buy them in the small containers. I also baked these cookies on a green silicone baking mat on a cookie sheet.
The recipe called for these cookies to be cooked on parchment. I bought two of these mats a while ago at Meijers-I think they were 6.00 each or less I bought 2 and use them frequently. I've made these without the sheets and they were overdone, I turned my back on them for like 2 minutes-burnt.
These cookies are very fragile until they're cool. I bake for about 15 minutes til they lose their shine, let them cool about 4-5 minutes, carefully remove the from the sheet and let the cool completely. They freeze very well and have a very nice almond flavor. I've made these alot and people love them-not just kids..
