This is a recipe from my stepdad's family, they called it Pebble's Red Devil Cake. My best memory was of my Dad's Aunt Grace making this for me and my brother's birthday.
This is the recipe we always make for family birthdays. My husband (Skinny Bastard) has gotten hooked on this cake also.
This is awesome to freeze, make your cake, let cool, frost, slice (eat a piece or two). Wrap slices in waxed paper put in container or ziploc and put in the freezer. My husband takes a slice out and lets thaw gets some ice cream- what a skinny bastard (wish I was).
But here's the recipe, it's always moist and chocolatey
Aunt Grace's Chocolate Cake
1 cup softened margarine
2 cups sugar
Beat well, add
2 eggs
1 teaspoon vanilla
Beat again
add 1/2 cup sour milk-(I add 2 teaspoons baking soda & 1 Tablespoon Vinegar)
Beat in and add
2 Cups Flour, mix well
Add 1 cup boiling water with 4 heaping tablespoons, unsweetened cocoa
Beat well, pour into 2 greased cake pans
Bake at 350 30 minutes.
Let cool and frost-this is the frosting that has to go on this.
Beat 6 Tablespoons softened Margarine with 2/3 cup unsweetened cocoa, 3 3/4 cup confectioner's sugar, 1 teaspoon vanilla, add 5 Tablespoons milk 1 tablespoon at a time-frost and enjoy.
