Chocolate Biscotti
Yeah, I pretty much followed the recipe this time. They are not as good as the ones I buy at the warehouse Club.I used bulk food store cocoa, doubled the recipe and used 8 eggs..I spent big bucks and bought a bag of Ghiradelli bittersweet chocolate chips

I wish that I had brought 2 bags because I so would have melted a bag and dipped my cookies in it.
I had a bag of sliced almonds, and a handful of dried cherries. What I would have done differently?

Definitely double the recipe, these are good.
Before starting use aerosol butter to goosh down mixing bowl and beater. Beat your eggs and sugar until it's a pale yellow and doubled in size. I would have added 1 tablespoon vanilla & 1 tablespoon almond flavoring or a tablespoon of amaretto.
I also would add hazelnuts, toasted and coarsely chopped. I would have also added at least one cup of dried cherries,I liked the flavor and texture in these cookies. I baked the first baking for 25 minutes and it felt firm. But I made 2 loafs and I would bake for 40 minutes. Let cool and slice, on my second baking, I baked for 22 minutes, longer would have been fine. I like them very crunchy.
I used my silicone baking mats again.
I will warn you up front-grease your mixing bowl, spoon your hands. These dough is like instant cement, I couldn't get it off my hands, bowl, yech.
