Actually the middle of the thumb, surrounded by farms growing sugar beets, corn, beans and Apples.
My Mom and Uncle have quite a few apple trees, so my Mom (greatest Mom in universe) dropped off some apples and a gallon of cider. So I could make some apple butter.
I took my gigantic stock pot and filled to the brim with apples. The incredible thing about this recipe is that there is no peeling of the apples and you leave the seeds in-I know right? The draw back is you do need an afternoon off hanging around the house to make this. I also have a pinned recipe on my board -I so want to eat this for a crockpot apple butter-which is good but not quite this good, here's my recipe.
NEW HAMPSHIRE APPLE BUTTER
4 Pounds Tart Apples
2 Cups Apple Cider
Sugar
2 teaspoons cinnamon
1 teaspoon ground cloves
1/2 teaspoon allspice
Quarter apples, don't peel or seed-HA-Love that! Put in large enameled or stainless steel pot with cider. Bring to boil, reduce heat ad cook about 25 minutes til soft. Remove and puree in blender. Measure pulp and add 1/2 cup sugar for each cup of pulp. Put back in pan adding spices and cook on very low about 4 hours.This is done when apple butter sticks to bottom of saucer when then turned upside down.
Put in jars refrigerate or can if not refrigerating. Makes about 6 cups-great for gifts.
NOTE: I just finished making this and here's a tip. You may want to REMOVE THE SEEDS before you cook. Just got done with my butter and I cooked about 4 hours and I had to turn it off because it started burning on bottom and there were alot of seeds left. I don't understand my My mom's butter never has seeds..Man what did I do, maybe I should have put the entire thing in the crockpot, next time I will.
So I have a crusty pan that I spent the entire friggin day cleaning. But the good news it my apple butter does
taste really good.
And if you have apples left over, there are apple pies, apple sauce or peel, remove seeds and put in the freezer for a winter day.
